the basis of kyselo strong broth made mushrooms , caraway in water. thickened sourdough poured broth. supplemented onion sauted in butter, boiled , roasted potatoes , scrambled eggs , seasoned salt , vinegar.


due ancient origins, kyselo has no fixed recipe , preparation little different in every family. recipe passed on oral tradition. there local variants of kyselo in krkonoše: without eggs or hard-boiled eggs, boiled not roasted potatoes, or without cream, etcetera.


nowadays 1 can purchase industry-made instant powder kyselo base use in big canteens.

sourdough first basic ingredient of kyselo. should ideally made rye flour. can bought @ local food stores in krkonoše. in rest of world may bought @ bakeries or can made water, flour , allowed attract wild yeast. families in krkonoše grew own sourdough years in special cookware called kyselák or kvasák .


mushrooms

mushrooms second important ingredient in kyselo. central european edible species such cep , similar species used. mushrooms used dried in winter.


serving

kyselo traditionally served hot in soup plate or bowl. in restaurants served in edible bread bowl. garnished chopped scallion, parsley or other green herbs. soup eaten tablespoon. potatoes served on special plate (one whole table) , can add quantity needed. salt , vinegar on table personal seasoning preferences.


kyselo nutritious food served main (and only) course, in small quantities served entrée.
